Smoothie
Ellie LOVES smoothies. She asks me to make them for her all the time. Over Memorial Day weekend our friend, Rachel, taught Ellie to say "delicious"...it's her new thing now. Everything is delicious...

All By Myself...
Ellie has become quite the independent little girl. She likes to put her shoes on "all by myself", get in her carseat "all by myself", blow bubbles "all by myself"...and the list goes on...

A Little Kitchen Help
I decided to make some homemade granola the other day after reading this article. Ellie decided that she wanted to help me mix the ingredients. So we pulled up a chair and off she went mixing away.

The mixing got a little out of control and we soon had a mess on our hands. But, she was just as excited to sweep it up.

The granola turned out AMAZING..and was very simple...here is the recipe (it is from Alton Brown on the Food Network). You can add more or different nuts or anything else you can think of (we left out the raisins).
Ingredients
3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins
Directions
Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

Reading A Book
Ellie loves to read books...even by herself. Most of the time she is pretty vocal throughout the book...then there are times like these...

Happy "2nd" Birthday Ellie!!!
It's hard to believe it was 2 years ago that our little girl was born. She has grown into such an active and fun toddler who truly LOVES life! Here are some pictures of her Birthday Weekend. (The scratch on her cheek came from running in a restaurant on Friday night and crashing into a wall where there was a snagged piece of paneling)
